Our Briskets come in two sizes 5-6 LBS and 10-13 LBS, from time to time when we have a larger steer we will add a few options for larger briskets, so if you see one, grab it!
In reality you can smoke a brisket in a pinch. The brisket comes from the breast or lower chest of the steer. Since it is a highly utilized muscle there is a lot of connective tissue to support the animal. You need to cut this primal cut low and slow to break down some of the connective tissue.
