The short rib comes from the rib plate of the cow. Each one of our portions is ready for you to divide into 3 english style cuts, and weigh about 1.5-1.75lbs.

Short rib is a cut that you probably mostly eaten or seen cooked braised in a sauce with vegetables. It can be cooked a bunch of various ways, but all include one important factor: time. With a cut like short rib you have much more connective tissue than you do in a more naturally tender cut like a common steak like a ribeye. This beef is 100% grass fed, non-GMO, and anti-biotic free.
