Ingredients

  • (1 pound) Grass-fed Ground Beef
  • (1 can) Water chestnuts, drained and diced
  • (1/2) Onion, diced
  • (1/4 cup) Soy sauce
  • (2 tablespoons) Brown sugar
  • (2 cloves) Garlic, pressed
  • (1/2 tablespoon) Ginger, minced
  • (1/2 tablespoon) Sesame oil
  • (1/2 teaspoon) Garlic powder
  • (1/2 teaspoon) Onion powder
  • (1/4 teaspoon) Red pepper flakes, crushed
  • (2 teaspoons) Cornstarch
  • (2 teaspoons) Water
  • (1 head) Butter lettuce
  • (1 cup) Carrots, shredded
  • (3 stalks) Green onions, sliced
  • (1/4 cup) Spicy mayo
  • Yum yum sauce

Directions

  1. Make the Korean Sauce: In a small bowl, whisk together soy sauce, brown sugar, fresh garlic, ginger, sesame oil, garlic powder, onion powder, and red pepper flakes until well combined. In another small bowl, mix cornstarch and water to form a thin slurry, then stir it into the sauce.

  2. Cook the Beef: Heat a large skillet over medium-high heat. Add ground beef and chopped onion, breaking the meat apart as it cooks, until browned and no longer pink. Stir in the water chestnuts.

  3. Add the Sauce: Pour the Korean sauce into the skillet with the beef. Bring to a simmer and cook for about 5 minutes, or until the sauce thickens slightly.

  4. Prepare the Lettuce Cups: Core the lettuce head and carefully separate the leaves to keep them intact. Rinse and pat dry.

  5. Assemble and Serve: Spoon the Korean beef mixture into each lettuce leaf. Top with shredded carrots and sliced green onions. Add a drizzle of spicy mayo or yum yum sauce for extra flavor, if desired. Serve immediately and enjoy!
