Ingredients
- (1 1/2 pounds) Grass-fed Ground Beef
- (1) Onion, minced
- (4) Carrots, minced
- (3) Celery ribs, thinly sliced
- (1/2 cup) Barley
- (3 (10 ounce) cans) Beef broth
- (1 (28 ounce) can) Diced tomatoes
- (2 cups) Water
- (1 (10.5 ounce) can) Condensed tomato soup
- (1) Bay leaf
- (1 tablespoon) Parsley
- (1 teaspoon) Minced garlic
- (1/2 teaspoon) Dried thyme
- (To taste) Ground black pepper
Directions
- Gather and prepare all the ingredients.
- Heat a large pot over medium-high heat, add the ground beef, and cook until fully browned with no pink remaining. Drain off any excess fat.
- Add the onion, carrots, celery, and barley to the pot. Pour in the beef broth, diced tomatoes, water, and tomato soup. Season with bay leaf, parsley, garlic, thyme, and pepper.
- Bring the mixture to a boil, then lower the heat, cover the pot, and let it simmer for about 2 hours, stirring occasionally.
- Discard the bay leaf before serving.
- Serve the soup hot and enjoy.
