Ingredients

  • (1 1/2 pounds) Grass-fed Ground Beef
  • (1) Onion, minced
  • (4) Carrots, minced
  • (3) Celery ribs, thinly sliced
  • (1/2 cup) Barley
  • (3 (10 ounce) cans) Beef broth
  • (1 (28 ounce) can) Diced tomatoes
  • (2 cups) Water
  • (1 (10.5 ounce) can) Condensed tomato soup
  • (1) Bay leaf
  • (1 tablespoon) Parsley
  • (1 teaspoon) Minced garlic
  • (1/2 teaspoon) Dried thyme
  • (To taste) Ground black pepper

Directions

  • Gather and prepare all the ingredients.
  • Heat a large pot over medium-high heat, add the ground beef, and cook until fully browned with no pink remaining. Drain off any excess fat.
  • Add the onion, carrots, celery, and barley to the pot. Pour in the beef broth, diced tomatoes, water, and tomato soup. Season with bay leaf, parsley, garlic, thyme, and pepper.
  • Bring the mixture to a boil, then lower the heat, cover the pot, and let it simmer for about 2 hours, stirring occasionally.
  • Discard the bay leaf before serving.
  • Serve the soup hot and enjoy.
