Delicate and savory, Enoki Beef Rolls are a flavorful Japanese-inspired dish featuring tender slices of Circle J striploin beef wrapped around bundles of enoki mushrooms. Simmered in a light soy-based sauce and finished with egg and scallions, these rolls are both elegant and easy to prepare. Serve them with steamed rice or vegetables for a comforting, umami-rich meal.

Ingredients
- (1 lb) Grass-fed Boneless New York Strip Steak
- (150 g) Enoki mushrooms
- (2 teaspoons) Sesame oil
- (1 piece) Onion, thinly sliced
- (2 pieces) Eggs, lightly beaten
- (1 piece) Scallion, chopped (For garnish)
- (1/4 cup) Dashi stock (Substitute with chicken, beef, or vegetable broth)
- (1 tablespoon) Sake
- (1 tablespoon) Mirin
- (1 1/2 tablespoons) Soy sauce
- (1/2 tablespoon) Sugar
Directions
- Prepare the Mushrooms
Trim off the root ends of the enoki mushrooms and gently rinse under cold water to remove any dirt. Separate them into 15 small bundles. - Wrap the Beef Rolls
Lay a slice of beef flat and place one bundle of enoki mushrooms at one end. Roll tightly to enclose the mushrooms, then repeat with the remaining slices. Set the rolls aside. - Mix the Sauce
In a small bowl, whisk together dashi, sake, mirin, soy sauce, and sugar until fully dissolved. Set aside. - Cook the Onion and Rolls
Heat oil in a large skillet over medium heat. Add the sliced onions and sauté for 4–5 minutes until soft and translucent. Arrange the beef rolls over the onions in a single layer. - Simmer with Sauce
Pour the prepared sauce over the beef rolls. Cover with a lid and simmer for about 5 minutes, until the beef is cooked through and the enoki mushrooms are tender. - Add the Egg
Pour the beaten eggs evenly over the beef rolls. Cover again and cook for 1 minute, or until the eggs are softly set. - Serve and Garnish
Remove from heat, sprinkle with chopped scallions, and let cool slightly before serving. Enjoy with steamed rice or a side of sautéed vegetables.
