Corned Beef Hash

Ingredients

  • (2 tablespoons) Butter
  • (2 tablespoons) Extra-virgin olive oil
  • (1 piece) Large onion, chopped
  • (5 pieces) Yukon Gold potatoes, peeled and cut into ¼-inch cubes
  • (1 piece) Large carrot, coarsely shredded
  • (2 pounds) Cooked corned beef, cubed
  • (2 tablespoons) Fresh parsley, chopped
  • (To taste) Ground black pepper
  • (1/4 teaspoon) Dried thyme leaves
  • (To taste) Salt

  • Prepare the Base

In a large skillet, melt the butter with olive oil over medium heat. Add the chopped onion and cook for about 8 minutes, stirring occasionally, until lightly browned and fragrant.

  • Add Vegetables

Stir in the diced potatoes and shredded carrot. Continue cooking, stirring occasionally, for about 15 minutes or until the vegetables are tender and golden.

  • Mix in the Corned Beef

Add the cubed Circle J Corned Beef, parsley, pepper, thyme, and salt. Stir well to combine.
